Maple Syrup Pancake

Ingredients (1 pancake)
  • 2 tbsp all-purpose flour
  • 1 tsp sugar
  • Pinch of baking powder & salt
  • 2 tbsp milk
  • 1 tsp oil or melted butter
  • 1 small egg (or ½ tsp flaxseed + 1½ tsp water for vegan)
  • Muskoka Maple syrup (for serving)
Method
  • Mix the dry ingredients (flour, sugar, baking powder, salt) in a bowl.
  • Mix the wet ingredients (milk, egg, oil) in another bowl, then combine with the dry ingredients. Stir lightly.
  • Heat a non-stick pan, add a little oil, and cook the pancake until golden brown on both sides.
  • Serve with maple syrup.

Maple Glazed Roasted Vegetables

Ingredients
  • Carrots, sweet potatoes, pumpkin, beetroot (chopped) – 3 cups
  • Olive oil – 2 tbsp
  • Muskoka Maple syrup – 2 tbsp
  • Salt & pepper – to taste
  • Fresh rosemary – 1 tsp
Method
  • Preheat the oven to 200°C.
  • Toss all the vegetables with olive oil, maple syrup, salt, pepper, and rosemary.
  • Roast for 25–30 minutes, stirring halfway through.
  • Serve hot as a side dish.

Maple Granola Bars

Ingredients
  • Rolled oats – 2 cups
  • Mixed nuts/seeds – 1/2 cup
  • Dried fruits – 1/3 cup
  • Muskoka Maple syrup – 1/3 cup
  • Nut butter – 1/4 cup
  • Pinch of salt
Method
  • Warm and mix the maple syrup and nut butter.
  • Add the oats, nuts, seeds, dried fruits, and salt, and mix well.
  • Press the mixture into a pan and set in the fridge for 1–2 hours.
  • Cut into bars and enjoy!

Maple Roasted Sprouts

Ingredients
  • Brussels sprouts – 2 cups (halved)
  • Muskoka Maple syrup – 1.5 tbsp
  • Olive oil – 1 tbsp
  • Salt & pepper – to taste
  • Lemon juice – 1 tsp
Method
  • Toss the Brussels sprouts with olive oil, maple syrup, salt, and pepper.
  • Roast in the oven for 20–25 minutes until tender and slightly caramelized.
  • Drizzle with lemon juice and serve.
